Roasted Red Pepper Hummus
Have you ever made your own hummus? If so, you know what I mean when I say, you’ll never want to buy store bought again. Unless of course, you’re in a real pinch!
Homemade hummus is much more flavorful and fresh tasting! And it’s really so simple to make; it takes longer to wash the dishes than it does to make the actual dip, ha! If you’re serving a crowd or have a family, this is great to double or even triple the recipe of.

Yield: 8 (2 T) servings
Ingredients
1 can of cannellini beans, rinsed and drained
2 cloves of garlic
2T - 1/4 cup tahini
2 T lemon juice
1/2-1 tsp sea salt
1/2 tsp smoked paprika
1/2 tsp cumin
1-2 T cold water
1/2 cup jarred roasted red peppers
Directions
in a small food processor, add beans and lemon juice, and blend. Then, add garlic, roasted red pepper, spices, and blend again. Slowly pour in of cold water, 1 T at a time and blend until smooth. If you prefer a thinner consistency, add more water. Taste and add additional sea salt/spices, if needed
Serve with raw veggies, or your favorite crackers. Store any extras in the fridge for 3-4 days
